Recipe for Broccoli Salad
(measures are approximate)
1 lb broccoli, lightly steamed
1/2 lb red grapes, halved
1 cup sliced almonds, toasted (slivered almonds or walnuts would also work)
1/3 cup Gorgonzola cheese, crumbled
1 tablespoon lemon zest
Adjust the measures of the ingredients to your liking. I would recommend adding the crumbled Gorgonzola after you have added the dressing—which also has Gorgonzola in it—so the taste of the cheese doesn’t overwhelm the rest of the salad. I was also pretty frugal with the scallions and liberal with the lemon zest.
To a food processor add (measures are approximate):
1 cup light mayonnaise
1/2 cup Gorgonzola cheese
Juice from 1/2 a lemon
1/3 cup fresh flatleaf parsley
1/4 cup olive oil
Add first four ingredients and run food processor until nearly smooth. While processor is still running drizzle in olive oil. Adjust flavors and consistency to your liking. Pour over salad. Add crumbled Gorgonzola. Toss and finish with more lemon zest.
