Roasted Avocado Guacamole
This twist on traditional guacamole is great if you want something different or of your avocados aren’t quite ripe and are too hard to mash. Roasting them softens the meat and brings out the flavor.
Ingredients:
4–6 ripe avocados
1 whole roasted red pepper (fresh or from a jar)
1/2 a purple onion
1–2 medium tomatoes
Juice of 1–2 large lemons
1/4–1/2 cup olive oil
Cumin
Paprika
Cayenne
Chili pepper flakes
Garlic powder
Salt
Method:
Cut avocados in half. Remove seed and peel without cutting halves. Place in a single layer in a baking dish. Coat avocados on both sides with olive oil and lemon juice (lemon juice keeps the avocados from turning brown and also adds flavor). Bake at 400o turning once, for 15–20 minutes or until avocados are soft.
While avocados are roasting, rinse and clean one large roasted red pepper. Cut into 1/2-inch dice and set aside. Cut purple onion and tomatoes into fine dice and set aside. Remove avocados from oven. After somewhat cooled, place avocados in a bowl and mash. Mix in pepper, onion and tomatoes. Add additional olive oil, lemon juice and spices to taste.
