Joanie’s Zippy Party Wings
Ingredients:
Wings: 3 lbs party wings or drumettes
Cayenne pepper
Salt and pepper to taste
Sauce: 8 oz jar of apricot or peach preserves
1 package onion soup mix
2 T olive oil
Method:
Preheat oven to 425 Now pour yourself a glass of wine, a good California cabernet is recommended. Wash wings and dry with a paper towel. Arrange wings on a large cookie sheet (or two) liberally coated with cooking spray. Wings should not be touching which causes them to steam and not get crispy. If you haven’t already, have some more wine. Sprinkle wings with salt and pepper, cayenne pepper and other herbs or spices to your liking…another sip!
Place seasoned wings in preheated oven and set timer for 15 minutes. Have another sip of wine and interact with your guests…fill your glass up first.
In a saucepan add preserves, onion soup mix and olive oil. Mix well and bring to a slow simmer, stirring often. Have more wine….Smiling yet?
After 15 minutes turn the wings and set your timer for 10 minutes. Stir the sauce, pour yourself another glass of wine and make a comment about the games incompetent officiating !!!
For the last five minutes turn your oven up to broil and start basting the wings with the sauce. Do this several times (this may require you to put the glass of wine down). The sauce will carmelize and bubble and the chicken skin should become crispy….yummy! Remove wings and allow to cool slightly. Pour remaining glaze into a bowl for dipping. Now open another bottle of wine for you and your guests and have some fun with everyone.
